Turkey and Hummus Pinwheels
Ingredients listed are for 1 wrap, makes about 8 pinwheels.
1 Flatout multi-grain or whole wheat wrap
3 Tbsp. hummus
1-2 Tbsp. plain nonfat Greek yogurt
3 slices turkey (low sodium)
Small handful of baby spinach
2 slices red bell pepper
2 Tbsp. shredded carrot
2 petite dill pickles, slice in half lengthwise
- Smear about half of the tortilla with hummus and Greek yogurt.
- Lining all the ingredients on the edge closest to you, place the turkey slices, spinach, red bell pepper, carrot, and pickles.
- Carefully roll the pinwheel, starting with the edge closest to you and rolling away from your body.
- Hold the pinwheel in place with about 9 toothpick, placed ½ – 1 inch apart. Cut off both ends. Slice in-between the toothpicks with a sharp, serrated knife, about 8-9 ½ – 1 inch slices.
- Serve chilled.
